Our head chef, Loredan Gargalac is originally from Bucharest in Romania and has over 21 years experience in international gastronomy. He won the RAC Fine Dining Award in 2003 and was an integral part of the winning team for the AA Best Seafood Restaurant UK 2004-2005 and a prestigious Remy Award at The Crab (2 AA rosettes) at Chieveley in Berkshire. After he took part in the Henley Food Festival with Antony Worral Thompson, Raymond Blanc and many other celebrity chefs he was offered an Executive Group Sous Chef position at the London Brasserie to work alongside Executive Group Chef Award winning Michelin starred chef James McLean. Loredan Gargalac with his vast experience and knowledge has decided to join our team at The Black Horse and produce exciting menus using fresh and locally sourced ingredients. Making an exciting variety of dishes such as Crab and Coriander crusted Cod with crushed new potatoes and mange tout or salad, or Grilled Sardines on a Spanish salad or Confit of Duck, red cabbage compote with Madeira jus, and Caramelised Red Onion and feta cheese tart tatin with rocket and a balsamic and port wine syrup which have become firm favourites with our regulars. |
